At Ruby’s Flavor Factory Guests discover a 19th-century citrus plant that has been repurposed into a unique dessert experience. Passed down through generations of citrus farmers, the current proprietor, Ruby, prefers working with flour and sugar and has transformed the space into a modern bakery and cafe with a vintage flair that pays homage to her family’s Florida legacy.

Using our citrus heritage as inspiration, Ruby’s Flavor Factory tells the story of fictional Sol Family. Immigrants from Spain who made their way in Florida in the citrus industry. Passed down through generations, Ruby taps into the history of her family and Florida to create a unique signature menu inspired by citrus flavors, as well as a cupcake factory experience that allows Guests to tap into their own creativity.
